Broccoli Beets Salad

Ingredients
  • 1 lime
  • 1 tbsp. extra virgin olive oil
  • ⅛ tsp. black pepper
  • Pink Himalayan salt to taste
  • 1 large beet, peeled
  • ½ head of cauliflower, chopped
  • 2 heads of broccoli, chopped
  • 1 cup sugar plum tomatoes, halved
  • 1 small cucumber, cubed
  • 3 tbsp. organic roasted garlic hummus dip
Instructions
  1. Dressing:
  2. Combine the juice of one lime, extra virgin olive oil, pink Himalayan salt, and black pepper, stirring with a whisk. Drizzle vinaigrette over salad.
  3. Salad:
  4. Peel beets and thinly slice them with a spiralizer
  5. Place cauliflower, broccoli, tomatoes, and cucumber in a medium bowl and gently toss in dressing.
  6. Arrange the sliced beets around your plate, and the rest of the salad in the middle.
  7. top with a spoon of hummus.
