Homemade Gluten Free Chicken Tenders

Ingredients
  • 4 organic free-range skinless chicken breasts, cut into finger-sized pieces
  • 1 tsp. garlic powder
  • ½ tsp. salt
  • 1 tsp. freshly grounded black pepper
  • 1tbsp organic freshly grated parmesan cheese
  • 2 eggs.
Instructions
  1. Preheat oven to 400F
  2. Pound chicken pieces to an even thickness
  3. In a shallow bowl, combine Ian’s Panko breadcrumbs, garlic and cheese
  4. In a separate bowl, combine the eggs, salt and pepper, stirring with a whisk
  5. Dip the chicken pieces in the egg mixture
  6. Roll chicken in seasoned breadcrumb mixture
  7. Place them in baking sheet and bake on top rack of oven for 20 minutes or more—depending on thickness—until chicken internal temperature reaches 165F.
  8. Serve with your favorite healthy dip. I like to serve mine with the delicious homemade ketchup I make.
