Quinoa Tabbouleh

Ingredients
  • 3 cups quinoa
  • 1 medium cucumber, diced
  • 1 medium red bell pepper, chopped
  • 1 cup raw cauliflower, chopped
  • 2 medium plum tomatoes, chopped
  • ½ cup organic pitted garlic olives, chopped
  • 2 green onions, chopped
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped
  • ¼ cup fresh cilantro, chopped
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons, organic extra-virgin olive oil
  • 4 tablespoons, organic fresh lemon juice
  • 1 teaspoon pink Himalayan salt or Celtic salt
  • ½ teaspoon freshly ground black pepper
Instructions
  1. Cook quinoa according to package directions (it usually takes 15 minutes). Transfer to a bowl and let it cool for about 10 minutes. Add everything else to the bowl, and mix well. Serve at room temperature or chilled.
