Raw beets’ sweetness and crunchiness are just perfect to alleviate your sweet tooth cravings, and they are packed with fiber, folate, potassium, vitamin C, manganese and iron! Not to mention that they help lower blood pressure levels and help improve physical performance during high intensity endurance exercises!
Broccoli Beets Salad

Ingredients
- 1 lime
- 1 tbsp. extra virgin olive oil
- ⅛ tsp. black pepper
- Pink Himalayan salt to taste
- 1 large beet, peeled
- ½ head of cauliflower, chopped
- 2 heads of broccoli, chopped
- 1 cup sugar plum tomatoes, halved
- 1 small cucumber, cubed
- 3 tbsp. organic roasted garlic hummus dip
Instructions
- Dressing:
- Combine the juice of one lime, extra virgin olive oil, pink Himalayan salt, and black pepper, stirring with a whisk. Drizzle vinaigrette over salad.
- Salad:
- Peel beets and thinly slice them with a spiralizer
- Place cauliflower, broccoli, tomatoes, and cucumber in a medium bowl and gently toss in dressing.
- Arrange the sliced beets around your plate, and the rest of the salad in the middle.
- top with a spoon of hummus.
