Who doesn’t like to devour some crunchy and finger licking homemade chicken nuggets? These are super lean, and they are gluten-free, for those of us sensitive or intolerant to gluten. I have a few versions of gluten-free chicken tenders, and I love them all. In fact, I also have a grain-free version to die for that I will be sharing with you later on, but today, I was craving for something crunchier. So, I decided to use Ian’s Panko breadcrumbs. For those of you not familiar with Ian’s Friendly Foods for Life products, you should definitely look them out! Their products are not only allergy friendly, but also gluten-free and free of preservatives, artificial ingredients, trans-fats, added hormones or antibiotics.
Homemade Gluten Free Chicken Tenders

Ingredients
- 4 organic free-range skinless chicken breasts, cut into finger-sized pieces
- 1 tsp. garlic powder
- ½ tsp. salt
- 1 tsp. freshly grounded black pepper
- 1tbsp organic freshly grated parmesan cheese
- 2 eggs.
Instructions
- Preheat oven to 400F
- Pound chicken pieces to an even thickness
- In a shallow bowl, combine Ian’s Panko breadcrumbs, garlic and cheese
- In a separate bowl, combine the eggs, salt and pepper, stirring with a whisk
- Dip the chicken pieces in the egg mixture
- Roll chicken in seasoned breadcrumb mixture
- Place them in baking sheet and bake on top rack of oven for 20 minutes or more—depending on thickness—until chicken internal temperature reaches 165F.
- Serve with your favorite healthy dip. I like to serve mine with the delicious homemade ketchup I make.
