I can’t get tired of quinoa! It is my favorite “grain” to add to my meals, because of the wonderful health benefits it provides me, besides being delicious! Today, I want to share with you this absolutely addictive quinoa tabbouleh salad! It takes less than 15 minutes to make, and after eating it, I feel light, fulfilled and full of vibrant energy! I use my favorite herbs on it as key ingredients: parsley, cilantro and mint! These herbs are often ignored as a table garnish, but they are highly nutritious, and they should be included in your juices as well for they are real powerful medicine for your body! These three herbs are cancers fighting, immune booster, anti-inflammatory and much more… Just to list a few more benefits:
•Parsley is a wonderful cleansing herb that fights free radicals that cause aging. It also refreshes bad breath and balances hormones.
•Cilantro helps your body detoxify from heavy metals such as mercury, aluminum, lead and others…It is also super anti oxidant.
•Mint releases indigestion, clears your skin from acne, prevents allergies and asthma, releases stress and depression, among many other benefits!
- 3 cups quinoa
- 1 medium cucumber, diced
- 1 medium red bell pepper, chopped
- 1 cup raw cauliflower, chopped
- 2 medium plum tomatoes, chopped
- ½ cup organic pitted garlic olives, chopped
- 2 green onions, chopped
- ¼ cup fresh parsley, chopped
- ¼ cup fresh mint, chopped
- ¼ cup fresh cilantro, chopped
- ¼ teaspoon freshly ground black pepper
- 2 tablespoons, organic extra-virgin olive oil
- 4 tablespoons, organic fresh lemon juice
- 1 teaspoon pink Himalayan salt or Celtic salt
- ½ teaspoon freshly ground black pepper
- Cook quinoa according to package directions (it usually takes 15 minutes). Transfer to a bowl and let it cool for about 10 minutes. Add everything else to the bowl, and mix well. Serve at room temperature or chilled.
